Specialty Area:
Associate Professor in the Health Sciences Department, Dietetics Program. Teaches at both undergraduate and graduate levels; courses currently include Nutrition for Wellness, Food Service Systems, Quantity Food Production, Lifecycle Nutrition, and (graduate level) Nutrition Education / Counseling. She also taught Computer Systems in Foods and Nutrition for 13 years, Sports Nutrition for eight years, and one semester of (graduate level) Current Topics in Foods.
Research Interests:
Special areas of interest include dietetics/medical history with focus on Civil War period, nutrition education and counseling techniques, special nutrient and educational needs of developmentally disabled individuals and their families, nutrition and behavior, and related projects which combine research and service in community and worksite settings.
