Stephanie Hudy, Dietetics

Stephanie Hudy earned her Bachelor of Science degree from Virginia Tech in Food in Nutrition and her Master of Science degree from the University of Georgia. She is a registered dietitian. Prior to coming to JMU, Stephanie worked in school food service in Florida and Arkansas before working with the WIC program for the Virginia Dept. of Health in Supplemental Nutrition Programs for 12 years. She has worked part time at JMU for 8 years and this is her first year as a full-time staff member.

Her favorite part of her job at JMU is the professional atmosphere. She enjoys teaching students at an adult level and sharing her knowledge with others. A little known fact about Stephanie is that she and her husband own a blueberry farm.

Herb Amato, Athletic Training

Dr. Amato earned his Bachelor of Science degree from WVU in Physical Education. He earned his Master of Science degree from JMU in Education and his Doctor of Arts degree from Middle Tennessee State University. He has worked at JMU for 18 years now in various roles within the athletic training program. Prior to JMU, Dr. Amato worked for four years at a high school in Durham, NC and taught four years at Mars Hill College in NC.

Starting in July, 2006, Dr. Amato will be switching roles. He has been serving the Department of Health Sciences as the Athletic Training Education program coordinator and the General Education program as the Cluster 5 coordinator. In his new role, he will be the Associate Dean of General Education. He will still teach one or two classes within the athletic training department, but the majority of his new responsibilities will be to the General Education program.

Amy Yun, Occupational Therapy

Dr. Yun completed her Bachelor of Science degree from Clark University in Worcester, Massachusetts. She completed her Master of Science degree from Springfield College and Doctorate from Nova Southeastern University in Occupational Therapy. Prior to her employment at JMU, she worked in Los Angeles at Atwater Park Center with an early intervention program. She also worked as a private pediatric occupational therapy consultant with sensory integration and with the Pediatric Therapy Network, specializing in sensory integration. While at the university clinic at Nova Southeastern University, she helped start a transitional living facility.

Her favorite part of her new job is the friendliness of students, faculty and staff. Her favorite part of teaching is the change she sees in students as they grasp the subject at hand. She enjoys the small classes she teaches, mostly because she can get to know the students personally and know their future plans.

Dr. Yun has a 17 month old baby that she enjoys playing with and teaching. She used to volunteer at the Humane Society and hopes to be more involved with working with them in the future. She also hopes to work with animal assisted therapy in the future. When the weather is warm, she loves to hike and rock climb. A little known fact about Dr. Yun is that she is currently learning Korean, her husband’s native language.

Rachel Meadows, Office Assistant

For the past three years, Rachel has helped students and faculty keep paperwork and forms straight and properly filled out. She also is the department contact for bookstore orders, point person for answering the phone and general communications expert within the department.

Rachel finds helping others the most rewarding part of her job. Recently married, Rachel enjoys shopping, buying shoes and spending time with family and friends.

Susan Nicholas, Office Manager

Susan has been the Health Sciences Office Manager since September 2001. Her primary responsibility is to work with the departmental budget, but she also fills other key administrative roles and keeps people smiling. Prior to her current position, she worked with the Occupational Therapy staff in a supporting role.

The most rewarding part of her job is when the numbers work. She also enjoys the gratitude shown by coworkers for small deeds. A little know fact about Susan is that she is the egg lady….she has chickens that lay eggs! In her spare time she enjoys working in her garden and keeping her soon to be teenaged son out of trouble!
